A little over a year ago we started a search for a buyer who was looking for something in the low $300,000’s. There were several options, but none that really fit the bill. The buyer was totally reasonable and educated in what they were looking for. Nothing was purchased.
Isn’t hindsight an amazing thing though??!!  If we had only known that the Ottawa housing market would change as it has…I have no doubt that one of the “potentials” would have been purchased last year. Now…with the price of one of those houses up potentially $75,000 it would be impossible for the purchase to happen. Should, coulda, woulda…
Do I think that this is a bubble that is going to burst? Absolutely not! Ottawa house prices have remained fairly flat over many years until recently, in fact not even keeping up with the cost of living. The housing prices are not going to get less expensive. Does this mean that the price of your house is going to continue to increase dramatically? Not necessarily! New home starts are up this past year with builders paying careful attention to where demands are! So that area of town where this year houses of a certain type may be jumping off the shelf in bidding wars…..may have “new home” competition in the immediate upcoming years. Areas that used to be “THE” place to live now have competition as newer areas mature. The market is ever-changing.

Recipe of the Month: Instant Pot Mushroom Risotto

While I am secretly a “wanna-be-Italian” I most definitely am not and the proof of this is in my dread of making risotto. That is until I discovered how to do it in

the Instant Pot!!! While Barbara makes it with her eyes closed and with no dread what so ever…the old fashioned way…this is my new and much preferred easy way to make it!!

INGREDIENTS

  • 2 Tbsp. extra-virgin olive oil
  • 1 lb. wild mushrooms, trimmed, sliced (I buy mixed dehydrated ones at Grace In The Kitchen!)
  • Kosher salt, freshly ground pepper
  • 1 medium onion, chopped
  • 2 cups carnaroli or arborio rice
  • 1/2 cup white wine
  • 4 1/2 cups vegetable or chicken stock
  • Chopped parsley and finely grated Parmesan (for serving)

METHOD

  1. Set Instant Pot on medium heat or “Sauté” and pour oil into cooker insert. Add mushrooms and cook until any moisture they’ve released is evaporated and they start to brown, about 10 minutes; season with salt and pepper. Add onion, stir to combine, and cook until translucent, about 8 minutes. Add rice and stir until chalky white, about 3 minutes. Add wine and cook until mostly evaporated, about 3 minutes. Stir in stock. Lock on lid, making sure steam-release valve is in the proper sealed position. Select “Manual” and program for 5 minutes at high pressure (it will take about 10 minutes for the pressure to build before cooking automatically begins).
  2. As soon as the time has elapsed, turn off cooker, “Quick Release” the steam, and unlock lid. Stir with a wooden spoon; season with salt and pepper.
  3. Divide risotto among bowls. Top with parsley and Parmesan and serve.
